You step onto the deck, and it hits you: a majestic view of Boulder and the foothills. You’ve arrived at the FlagStaff House Restaurant just in time to snag a table and watch the sun slowly dip slowly behind the city. Settle into this mountain cabin turned restaurant for a dining experience that dazzles. Savvy restaurant owner, Don Monette, and his sons Mark and Scott, know that open-air dining not only offers a prime vantage point for mesmerizing views looking skyward but also brings a calmness to the dining experience.
When it comes to ordering, expect plenty of local ingredients on the French American Menu. Some must try local items include Full Circle Farms Cantaloupe Soup, the Colorado Lamb Rack and the Local Vegetable Tasting. The enticing dessert menu includes freshly spun ice creams including white pepper goat cheese, white chocolate mint, and salted caramel. The restaurant is known for it’s extensive wine collection, but if you are in the mood for a cocktail there are plenty of classics as well as others you will only find at Flagstaff House. The Rocky Mountain Elderberry is made with Leopold silver tree vodka, cucumber liqueur, elderberry soda and grapefruit bitters.
The restaurants sommelier, Paige Bodine, has seen the wine collection grow to include a 12,000-bottle cellar– one of largest collections in Colorado. “The wine program has progressed with an all time apex. There are so many good wines being made around the world,” says Bodine. During his 20 years with the restaurant he has had several memorable guests, including Magic Johnson. “He is a larger than life person. The whole restaurant was transfixed when he was here. I remember him ordering Rose Champagne,” remembers Bodine.
During your visit, take time to savor the atmosphere of the restaurant. Take a look at the rare crystal collection that includes pieces Don has collected from around the world. Photos on the wall capture the moment when Emperor Akihito and Empress Michiki of Japan came to dine in 1994. There is also a display case with wines dating back from 1945 and even a bottle of 1918 Mouton.
