Making sausage is not a typical Sunday afternoon activity for everyone, but for Mark DeNittis it was a weekly happening. With wine in hand and a tuned up grinder, you can imagine his Italian American family churning out tradition in Worcester, MA. The focus centered on enjoying the process of cooking and the delicacies created. DeNittis is now bringing the sense of neighborhood he experienced in Worcester to Colorado through his company, the Rocky Mountain Institute of Meat. After all, butchery is making a comeback.

Recently, DeNittis, taught a sausage making class at Amerigo Delicatus. Tentiko, a company that is offering authentic local experiences and hands-on, insider access to Denver’s creators and artisans, hosted the sausage making class. “We see a great turnout with these classes because now more that ever consumers are demanding to know what’s in their food,” says DeNittis. Well, in this case it couldn’t be simpler- pork, spices and sometimes a little vino. Period.

Soon to be link-making experts learned the ropes of making sausage during the two-hour class. From chopping, grinding and casing- the goal is to be able to leave with needed to tools to make your own sausage at home. Working alongside DeNittis and assistant instructor, Jason Nauert chefs in training left with a selection of spiced sausage. And knowledge about texture, flavor and culinary insights about the lost art of butchery.
