Several consumers started to lose interest in the varietal because of an oaky taste but regions like Niagara are adapting with more food-friendly and fresh versions. Aside from making some of the most sought after chardonnay, the region is hosting the 5th annual Cool Climate Chardonnay Celebration July 17-19 . The celebration draws chardonnay winemakers from across the globe and also those who come just to taste.
