Walk into LYFE Kitchen and expect instant energy. It’s not just from the bright atmosphere but the kind of food served.  It’s described as “good for you food” that is convenient and affordable. You can try is starting on June 6- that’s when the first restaurant in Colorado opens at Park Meadows Mall.

Menu items are created by executive chefs Art Smith and Tal Ronnen, as well as Jeremy Bringardner, who recently won the title of Chopped Champion on the Food Network’s cooking competition show, Chopped. (More on that at the bottom, after I had the chance to interview Jeremy in Denver). LYFE Kitchen’s three visionary chefs spent an entire year pursuing the LYFE Kitchen Restaurant taste quest – exploring varieties of herbs, spices and sauces – to develop flavors and find the ingredients that make LYFE’s  menu so delicious.

Some of the most popular dishes: Quinoa Buttermilk Pancakes; Art’s Unfried Chicken with roasted brussels sprouts, butternut squash, dried cranberries, cashew cream, dijon  vinaigrette; and Chocolate Budino, an Italian pudding with pomegranate chia seeds and toasted almonds. Locally sourced ingredients include bison from High Plains, seasonal produce from Petrocco Farms, and coffee from Coda. You will find options to fit everything from paleo and gluten-free to vegetarian, vegan and flexitarian.

When it comes to the atmosphere, expect building materials and furniture made from sustainable and recycled materials- like the community table which is made from local Colorado beetle kill pine.

LYFE Kitchen will be open for breakfast, lunch and dinner seven days a week and also serves wine and local beer.  Monday through Thursday from 7 a.m. to 9 p.m., Friday and Saturday from 7 a.m. to 10 p.m. and on Sunday from 8 a.m. to 8 p.m.

LYFE Kitchen is located between Crate & Barrel and Nordstrom at Park Meadows Retail Resort located at 8401 Park Meadows Center Drive, Suite 2805, Lone Tree, Colo.

*Chef Jeremy Bringardner is so passionate about his job that he can’t help but beam with enthusiasm. And that’s a good thing especially when he is in the business of making nutritous food more accessible.  Jeremy has always loved the creativty of cooking but really fell into the healthy aspect of it while acting as a personal chef for someone with colon cancer. “It just clicked with me. I really felt like it may be valuable someday.” It all came full circle when he started a job with Lyfe Kitchen, using his culinary nutrition degree from Johnson and Wales, the first program of its kind in the world.

Another neat fact about Jeremy is that he won title of Chopped Champion on the Food Network’s cooking competition show, Chopped. Jeremy says he set out to win, focusing each and every detail for months. Running through showtapes and practicing run throughs with mystery ingredients made him feel like he was an Olympian training for gold. Manifesting his goal worked- you can watch the show here.
