Q&A With ‘The Kitchen’ + Chance to Win

The Kitchen opened 10 years ago with the mission to create community through food. Today there are three concepts: The Kitchen, a community bistro; The Kitchen Next Door, a community pub; and The Kitchen Upstairs, a high energy cocktail lounge.   When Hugo Matheson and Kimbal Musk co-founded The Kitchen they did not expect to grow the restaurant – they were focused on creating a wonderful experience for the community to enjoy real food. But as demand picked up, expansion was inevitable.

Q:  What are some staples on the menu? What makes the Kitchen different than other restaurants?

The Kitchen Tomato Soup, Upstairs Wisdom & Wine Special, Next Door Wings, Next Door Whole Garden Salad and the Next Door Kale Chips.  The Kitchen is different from other restaurants as it is built by a community of craftsman, serving food & drink from a community of like-minded farmers, ranchers and purveyors for the sustainable enjoyment of the whole community.

 Q: Why is it important to focus on seasonal ingredients?

The Kitchen focuses on seasonal ingredients that are available from a community of farmers and ranchers because The Kitchen believes in conscious sourcing of all its food – and drink! – so even when food isn’t necessarily “local” such as seafood, The Kitchen has strong relationships with their purveyors and knows exactly where all of the food it serves comes from.

 Q: Tell us more about the Community Dinners?

Community Night was established after customers saw members of the staff enjoying a “family meal” in the main dining room of The Kitchen Boulder. Everyday, The Kitchen staff including managers, servers, hosts, chefs, and dishwashers, a treated to a meal together that is served family style. It looked like so much fun that the customers asked if they could join in and that prompted the idea of Community Night where members of the Community can sit at one table and enjoy a seasonal dish that is served family style. Half of the proceeds benefit local school garden programs.

 Q: What is the biggest challenge in the business?

The biggest, and most fun, challenge is maintaining relationships with many purveyors to ensure the highest quality food possible.

Q: What are the plans for growth? 

Colorado is a wonderful place to have started The Kitchen and we are excited to expand beyond Colorado to Chicago in the fall of 2014.

 Q: What is something readers would be surprised to know about The Kitchen? 

One of the founders of The Kitchen, Kimbal Musk, got his start as a successful tech entrepreneur who sold his first company with his brother during the dot com boom. Kimbal was one of the first investors of PayPal.
