The latest food craze to hit Colorado? The waffle sandwich. If you’ve never had one, then you’re in for a treat: Southern California-based Bruxie has perfected the recipe. Chefs and founders Dean Simon and Kelly Mullarney spent years evolving their recipe, and now they are bringing their light, airy versions of the authentic Belgian Waffle to Glendale.

The fast-casual restaurant opened last month and offers a variety of both savory and sweet sandwich options, all with fresh, seasonal ingredients and handmade sauces. Some of the menu items include: the Buttermilk Fried Red Bird Chicken Breast with chili honey and cider slaw, the Bruxie Burger made from Aspen Ridge beef, the Prosciutto di Parma and Gruyere, and the Roasted Mushroom and Haystack Mountain Goat Cheese. If you’re in more of a dessert mood, the sweeter options include Strawberry Creme Brulee, Nutella & Banana, Belgian Chocolate Ganache, S’mores, and PB&J. All are served in the Bruxie waffle, which is crisp, lightly yeasty and not too sweet – reminiscent of freshly baked bread.

“Shortly after opening our first location in 2010, we realized that Bruxie struck a chord with diners, who craved a menu of bold, flavorful combinations made with quality ingredients,” said Simon. “I see Denver as one of the most food-centric cities in the country, and hope our chef-driven concept will achieve the same enthusiastic following we experience in Southern California. We believe we have created something noteworthy and hope the people of Denver will agree.”

The local chef behind Bruxie’s newest location is Matt Stein. Originally from NYC, he graduated from the Culinary Institute of America before going to work in Europe for several years. After returning to the US, he moved to Aspen and then California, earning his chops by working at top restaurants.

“Dean and Kelly created an amazing concept with Bruxie” said Stein before the restaurant opened. “It’s gourmet quality food, but delivered in a fast casual concept with great guest service. I can’t wait to get the first location open so I don’t have to fly to California every two weeks for a fix!”

Bruxie will serve breakfast, lunch, dinner and dessert (the best part, of course) seven days a week. They also serve their new custom crafted coffee, The Bold Blend, and offer a wide range of coffee and espresso drinks.
