Koop Deville is the copper colored love child of two separate beers, fermented apart then blended together and dry-hopped. Koop gets Belgian characteristics from his barrel-aged brettanomyces fermented dad and a hint of sour from his saison mother (she’s French after all). Of mixed decent, Koop’s complexity garners him lots of attention.
Course 1
Max MacKissock and Blake Edmunds: Bacon wrapped shrimp mousseline with shrimp and chile consommé, Uni mayonnaise, mostarda
Beer: Breckenridge Well Built ESB
This extra special brew was well built intentionally. In team effort with our neighbors and Colorado’s own, Stranahan’s Whiskey Distillery, we combined the warming malt notes and pronounced hop characteristics of our Small Batch ESB with their ambrosial whiskey flavors to create the first ever collaboration of its kind. Aged for 6 months in Well Built Oak Whiskey Barrels.
Course 2
Kim Alter: Onion soup, smoked egg yolk, bacon
Beer: Denver Beer Co. Tiffani “Amber” Thiessen
Our take on an Amber Ale and named after one of our favorite actress’s, she pours a beautiful deep amber and offers up big hints of sweet malts, caramel and a hint of hops in the background. A smooth, easy drinking body with additional hints of caramel & malt bring you into a semi-sweet finish with hints of sweet oak.
Course 3
Jen Jasinski and Jorel Pierce: Stout braised pork belly with chestnut polenta, crispy chestnuts, smoked malts-glazed turnips and greens
Beer: Great Divide Hoss
HOSS is based on the Märzen lagers of Germany. Rich, layered malt notes, with hints of cherry and dark fruits, dominate, while the unique addition of rye imparts a slightly earthy, spicy character. Hoss finishes crisp and dry, and its brilliant red-orange color is a toast to the sunsets that make the perfect backdrop for this beer.
Course 4
Cory Treadway: Carolina BBQ quail, bacon braised collard greens with sweet potato & bacon fritters
Beer: Wynkoop Kurt’s Mile High Malt
A Vienna style lager brewed with lightly roasted Ethiopian ANYETSU coffee using a recipe handed down by Kurt Vonnegut’s grandfather, who was a brewer. The beer is a malty sweet and copper colored brew with low bitterness that showcases balance and nuance of coffee flavor in a very clean and drinkable lager.
The recipe for this beer was given to Wynkoop founder John Hickenlooper by the late author. The first batch of was brewed in 1996 and then again in 2007 as a tribute to Kurt’s passing. We are brewing it to celebrate our 25th year in business and by recreating some hidden gems in our trick bag, we are paying tribute to our brewing history.

Great Divide Oak Aged Yeti Imperial Stout is Yeti Imperial Stout’s sophisticated sibling. They may be from the same clan, but they have entirely different personalities. Oak aging gives a subtle vanilla character, rounding out Yeti’s intense roastiness and huge hoppy nature. Who says you can’t tame a Yeti?
Breckenridge 72 Imperial – Brewed with chocolate from Colorado’s very own Rocky Mountain Chocolate Factory, Inc., this Imperial Chocolate Cream Stout is full of rich, toasted chocolate notes with hints of dark fruit. 72 Imperial will take you where you need to go. Just sit back and enjoy the ride.
Denver Beer Co. Graham Cracker Porter – Our GABF medal winner is a unique take on the classic English style Porter. This medium bodied delight has nice hints of chocolate & vanilla on the nose, beautiful notes of more chocolate & biscuit in the body that bring out a complex array of vanilla, cinnamon, nutmeg & roastiness in the finish. A S’mores in a glass.
