My latest assignment for USA Today Travel takes a look inside Mile High Spirits Distillery in Denver, Colorado. I went behind the scenes with owners Joe Vonfeldt, Chase Campbell and Wyn Ferrell to find out what the craft distilling craze is all about.
People have been buzzing about craft beer for years, and Mile High is capitalizing on that buzz: taking what people love about beer and translating that into spirits. At the core, they’re developing spirits at a micro level, which allows them to offer seasonal flavors and small batches of unique products that big liquor brands can’t do.
Using top-of-the-line ingredients like non-GMO corn and high quality Rocky Mountain filtered water allows Mile High to produce clean, crisp products that have won multiple awards and keep customers coming back for more. The fact that it’s made locally is another selling point for Denver residents.
“We make everything onsite and we have a tasting room that offers really fresh and unique cocktails,” said Ferrell.
The atmosphere of the tasting room, which opened in 2012, is rustic and relaxed with an open floor plan, plenty of couch space and a pool table. In the summer there’s a patio complete with picnic tables and yard games.
“People really like it in here just because it is a little more laid back,” said Campbell. “You can hold a conversation with someone sitting on our leather sofas. It’s comfortable, you almost feel like you’re sitting in your living room hanging out with your friends.”
Right now Mile High’s tasting room is serving up their own version of a hot apple cider. Featuring Fireside cinnamon-infused whisky, this toasty beverage is perfect for warming up after a winter day spent out in the Colorado cold.
The tasting room also specializes in delicious “infusions,” combining Mile High’s smooth Elevate vodka with all kinds of fresh fruit and vegetables that give your typical Bloody Mary or Moscow Mule a flavorful punch.
Located in the heart of downtown Denver, Mile High draws a crowd that’s a blend of young professionals and creative types who line up to try their innovative cocktails and infusions nightly.
“Coming in here, you really get a great experience of what Denver is all about,” says Ferrell.
