Denver’s First Kombucha Brewery Opens in RiNo
Something new is brewing along Brighton Blvd, and it’s not another IPA. It’s Denver’s first Kombucha Brewery. Happy Leaf Kombucha is fermenting tea, which produces kombucha. Some of the flavors include Spiced Pear, Lavender Peach, Dry-Hopped Prickly Pear, and their flagship flavor, Longevity (Lemon, Hibiscus, Ginger).
Kombucha oringated in Asia- where it has been enjoyed for over 2,000 years. The fermentation process of this tea is similar to how you would ferment Greek yogurt or sauerkraut with lactobacillus. The lactobacillus also acts as a probiotic in the tea, and the fermentation process naturally produces B-vitamins. The beverage is usually enjoyed on its own— but can also be mix ed with gin, champagne, or beer.
Happy Leaf Kombucha has been selling their beverages at farmers markets throughout the Denver. Now that farmers market season has ended, they have opened Colorado’s first Kombucha Tap Room in Denver’s River North Neighborhood at 3519 Brighton Blvd, just two blocks north of The Source. The Tap Room offers tastings and bottles to go in a brewpub-meets-coffee-shop atmosphere.
Happy Leaf was started in a home kitchen and in less than six months, what began as a hobby became a commercial Kombucha Brewery— and in January of 2013, Happy Leaf Kombucha was founded. Now, Happy Leaf can be found at 14 locations throughout the Denver Metro Area, Boulder, and Golden.
