Q: How did the idea for “Jimmy’s Urban Bar & Grill” come to be?
When I found the space I brainstormed a couple different concepts and wrote up plans for each but after doing a little research on the area I decided to go with Jimmys Urban Bar & Grill (soon to be Jimmy’s Killer Cusine & Cocktails) a place that had a comfortable neighboorhood bar feel but serve up some great food that isn’t complicated.
Q: Tell us about the menu. How do you find inspiration for cooking?
Well really I have cooked in all types of kitchens , Italian, Seafood, Chinese , Indian , Southern Cajun, and American so I took influences from all aspects of what I learned to creat a menu that touches on all cooking styles and fusing some of them together to create unique dishes . I really just wanted to create a menu that while different and unique everything on the menu is familiar to my customers.
Q: Tell us a little about your background. Have you owned a business before?
This is my 3rd Restaurant , my first restaurant I opened in 2003 a very small place in Littleton called Chicago Jim’s had it for about 3 years but many mistakes made caused the restaurant to close but taught me a lot, I went and worked for a few other restaurants learning different cooking styles then opened a lunch and catering restaurant in North Denver called Urban Chefs which I ran for 3 years until I found this location which was exactly what I was looking for in a restaurant space as far as location.
Q: What is the biggest challenge of running the business? And biggest reward?
The long hours and constant repair issues especially being in an older building I am fixing something just about weekly . Honestly the biggest reward is when customers come to the kitchen to tell me how great everything was , I love seeing people happy especially while enjoying my food.
Q:What do you most love about Colorado?
The bi polar weather , it’s amazing one second it can be a blizzard the next 60 degrees and sunny . Also just how often it’s nice and sunny out , the mountains and the size I love the small city with a sorta big city feel .
Q: What is something readers would be surprised to know about you or your business?
Probably the fact that just about everything is scratched made we even make our own bar mixers, ice cream, and even ketchup . We also use only organic vegetables
