Savor a Delicious Dinner at 8k in Snowmass Village
Award-winning Executive Chef of 8K restaurant in Snowmass cooks up “Southern Rock” by stirring Creole flavors into the fine-dining experience for breakfast, lunch and dinner. Taking traditional Southern Recipes, Chef Will Nolan serves up menu items like shrimp and grits but adds his own sophisticated twist. Wild Sonora coast shrimp combine with Creole BBQ sauce, country grits and a poached egg for $19. “It’s pretty tasty. I grew up on shrimp and grits. I grew up in Louisiana,remember?” smiles Nolan.
Chef Nolan is also known for smoking some of his menu items like cheese and meets to add a distinct flavor. Nolan says he finds himself constantly creating recipes and utilizing new tools. “My smoker cost me my 401K plan but I put it too good use,” jokes Nolan.
Chef Nolan joined 8K in 2010 with a plate full of experience that includes being selected as a 2012 Finalist for Food & Wine’s The People’s Best New Chef. He says he is proud of the restaurant, even though people sometimes overlook Snowmass when heading up to Aspen. “Some people think Aspen is the only place for fine dining. I feel like an underdog. But I like that and I am used to it. I am a Saints Fan, come on now!” said Nolan.
Nolan’s creativity in the kitchen is catching on quick. In the height of ski season it’s not uncommon to
find tables in the fancy restaurant and lounge filled. If you find yourself with a weight, grab a drink from
the 87 foot glass bar punctuated with vibrant electric blue lighting. Geometrically shaped tables seat
guests in a warming environment that stays in touch with nature without losing its luxurious touch.
