The Infinite Monkey Theorem Keeps on Innovating
The Infinite Monkey Theorem (IMT) has already produced wine in cans, kegs and growlers. Now, the urban winery is introducing a Champenoise, a Champagne-style sparkling wine made with Colorado-grown Albariño grapes. This fall, IMT will crush four tons of Albariño grapes, and produce 240 cases, that will ready for drinking in December 2015. Since moving from its first home, a World War II Quonset hut – to its new 29,000-square-foot location in the RINO district– the winery has produced 10,000 cases of wine from 146 tons of grapes in 2012. The new spot also allows for expansion of tours and tastings in the Wine Lab tasting room and house parties.
There are also three new varietals from the 2012 harvest available in magnum-sized bottles, along with its first dessert wine, an Orange Muscat.
New releases from 2012 harvest are as follows:
– 2012 Orange Muscat, Grand Valley, CO: IMT’s first dessert wine, A delicious dessert in a glass, bursting with orange blossom, tangerine, rose petal, litchi, nectarine, honey and orange aromas and flavors. This is a sensory symphony offering elegance as well as intensity. Drink soon. 97 cases made $29.99.
– 2012 Cabernet Franc, Grand Valley, CO: “More robust and ripe than previous years. Strong cassis aromas abound backed by the smell of a light, sweet tobacco. Raspberry and violets hit the palate immediately, but it does not take long for the expected poblano pepper spice to come through on the finish.” $80 per magnum/ $25 per bottle
– 2012 Syrah, Grand Valley, CO: “Rich, velvet purple color with aromas of ripe blackberry and truffle. Great acidity and minerality with strong flavors of black plum, leather, and a white-pepper spice. Ripe tannins and great structure make this an easily agreeable wine. Ready to drink with some smoky barbeque in the summer or some roast lamb in the fall.” $80 per magnum/ $25 per bottle.
– 2012 Malbec, Grand Valley, CO: “A combination of raisin, tobacco and Portobello mushroom fill the nose, yet the palate is filled with black cherry and vanilla, backed with cocoa and dried fig. Robust tannins help give this wine an almost gamey note. Pair this with braised meats or some unique and different sausages … or indulge and break out the filet mignon.” $80 per magnum/ $25 per bottle.
– 2012 Blind Watchmaker Red, Grand Valley, CO: Petit Verdot and Merlot lead the blend. Immediately you are hit with strong aromas of blackberry and vanilla, but a little deeper you’ll recognize a touch of eucalyptus or even the sweet smell of a freshly sharpened pencil. Ripe cherry and blueberry are dominant flavors but are backed by a touch of liquorice. $25 per bottle.
