The new restaurant that has everyone in Denver is still about is Acorn, an eclectic eatery with Boulder roots serving seasonal dishes cooked with an oak-fired oven and grill.
Acorn offers a menu of shared plates, but word on the street is that the food is so good, there’s actually very little sharing going on. The restaurants serves classic North American dishes like chicken & biscuits and short ribs, with a focus on locally sourced ingredients.
“Whatever’s in season, whatever’s fresh, we try to utilize,” said co-owner Steven Redzikowski.
Acorn is located inside The Source, an old warehouse turned into a collective of food and retailers in the city’s RiNo neighborhood. Owners Redzikowski and Bryan Dayton, the team behind the popular OAK at Fourteenth in Boulder, said The Source was the perfect place to launch their Denver outpost.
“The space is great,” Redzikowski said. “Weekends are really nice because the whole building fills out.”
The interior of the restaurant is one of contrast: the walls are covered in graffiti, yet the tabletops are marble and the lighting and décor surprisingly elegant. And for a truly unique dining experience, guests of Acorn can sit on the chef’s line and watch the kitchen staff work with the pizza oven and wood-fueled grill.
Dishes to try include the oak grilled duck breast with candied macadamia nuts, palisade cherries and spiced yogurt, the carrot and ricotta ravioli, and the crispy egg and applewood smoked bacon salad.
The bar also offers something for everyone, from booze-free drinks (try the rehydrator, a refreshing mix of cherry, aloe, cranberry, lime and honey) to elevated ingredient-driven low-booze and high-booze cocktails. There is also a healthy selection of small-batch beer and wine. Don’t forget to munch on something if you’re going for the “high booze” cocktails. The bartender will recommend the crispy fried pickles.
Acorn is located at 3350 Brighton Boulevard and is open for lunch and dinner Monday through Saturday, and dinner only on Sunday. For more information, check out the website at denveracorn.com.
