Vin 48 Offers Classy Dining Experience in Beaver Creek
A classy wine bar serving wines from around the world and eclectic dishes is less than a five-minute walk from the Westin Riverfront Hotel and Spa. Created by a trio eager to leave the corporate restaurant world, Vin 48 is a spot unique to the Vail Valley. Careful attention is paid to each aspect of the restaurant, from the creatively crafted tables from a Denver merchant to menu options that run the gamut.
The feast begins with homemade bread and a variety of decadent whipped butters served in handcrafted bowl from Mongolia. Raw small plates offer cured meats and oysters,
while small plates feature items like the grilled kale salad and wild mushroom potato cakes. If you are coming in for the entire dining experience, feast your appetite on meals that include Grilled Scottish Salmon and Dry Aged Bone in New York Strip Steak. Still have room? Even if you don’t you will when you see the dessert menu. The lavender crème brulee and white chocolate cheesecake are just the tip of the tasty dessert spread. Changing five times a year, the menu showcases in season ingredients sourced from Colorado. In the summer months, some produce is grown in a community garden in Eagle, and even more is harvested from a garden in a nearby roundabout. Freshly picked crab apples from the tree in the front of the restaurant don’t have to travel far before they add a special sweetness to some dishes and also to infuse vodka.
The buzz isn’t just about the food or from the infusions. Gleaming from behind the bar, the enomatic preservation system keeps 32 bottles at their freshest state. Whether you
order by the glass or half glass, the restaurants sommelier will suggest a wine to best compliment your food choices. The environment is energizing with colorful artwork splashing colors in the dimly lit environment. A see through wine wall separates the main dining area from a more intimate section. You can also sit at the interactive chef’s table near the bar to get a
glimpse into the bustling kitchen. Floor to ceiling glass doors open up to the patio with views of Beaver Creek.
Owners of Vin 48, Chef Charles Hays, Wine Connoisseur, Greg Eynon and Restaurateur, Collin Baugh went to Italy to source inspiration. It was in the land of the boot Baugh decided to think about bringing Limencello to their restaurant. “Every place we went we were greeted with Limencello. It’s a way to say welcome to our home.” His recipe uses fresh squeezed lemons, is balanced and doesn’t have too much of the puckering zest of others. It’s been so popular, Colorado distributor, Cap Rock Gin will be bottling the recipe this year.
