Q:  How did the idea for “Bruxie” come to be? Why Waffles? 

We actually developed the recipe for the waffle before we decided to open a restaurant.  We sold the waffle mix to fine hotels, restaurants and cruise lines and could never reach the market potential we believed our waffle had.  The Bruxie Waffle is very different than what most people experience in the U.S. and we believed the waffles characteristics would allow us to break out of the “breakfast only mentality”.  The waffle is light and crispy and only 250 calories and is better than “sliced bread” for our unique sandwiches.

Q: How did Colorado get so lucky to be a market you expanded to? 

Colorado is the home to many creative concepts and unique cuisine offerings.  Bruxie is definitely a unique concept and the food forward/foodie culture in Denver led us to believe it would be a great place for Bruxie.

Q: Tell us how you incorporate local business? 

We use local suppliers like Red Bird Chicken, Aspen Ridge Beef, and Plum Daisy Preserves and partner with a many local businesses for a variety of services.

Q: What is the biggest challenge of the business? And biggest reward? 

They are kind of intertwined, business is a challenge due to the constantly changing landscape and the reward is figuring out how we navigate in that environment and have fun (most of the time) doing so.

Q: Tell us a little about your background. Have you owned a business before? 

I have been an entrepreneur for a good part of my life with involvement in a variety of business all of which are food related.  I started in the restaurant business when I was 15 years old and still love it.

Q:What do you most love about Colorado? 

The people, magnificent environment and the culture.

Q: What is something readers would be surprised to know about you or your business?

The biggest surprise first time customers experience it the uniqueness of our waffle and the variety of high quality ingredients we use in our menu offerings.  While we are a “chain” however we operate from a local perspective and are very active in the communities each store is located in.
