Rio Addds to Menu: Focuses on Local Spirits and Brews
There is a new vibe at the Rio. The company wants to support more local business and the market is demanding it. So, in the spirit of evolution, the restaurant made famous for mighty margaritas, is expanding even more from their tequila roots at all six of the Colorado locations (Fort Collins, Boulder, Denver, Greeley, Lone Tree and Steamboat Springs). You can now expect more offerings, which mix in Leopold Brothers, Cap Rock Gin and Stranahan’s Whiskey. Cue the floodgates because a lot of new creative cocktails have been concocted. Here is a preview. All cocktails are priced between $7 and $11
- “Skinny Margarita”, combo of lime, agave and tequila
- “Coin Margarita”, mixes Cuervo Platino, Contreau, and lime and the Ricky, which is a frozen Rio Marg
- Corinita—a mini Corona beer turned upside down in a margarita,]
- Cucumber Rum Mojito made with rum, mint, soda, lime and garnished with a cucumber
- Agave Martini brings in Don Julio Repasado, citrus, organge liqueur and grand mariner.
- The Perfect Storm, the Rio’s take on a “Moscow Mule” with lime, ginger beer and Herradura Reposado.
The changes don’t stop behind the bar, the food is also bringing in new flavors too. Bar menu items, ranging from $3 to $8, include shared plates like Tropical Guacamole, Crispy Jalapeño Caps, and Grilled
Pork Flautist and Steak and Seafood Empanadas and Ceviche.
